Pad Thai is a fried noodle dish combining flavours of sweet (white or palm sugar, in USA also ketchup is used), sour (vinegar, lime or tamarind) and salty (fish sauce or salt). It is a combination of wide rice noodles, marinated vegetables, crispy bean sprouts, peanuts, fried tofu, dried shrimps, and any meat or various seafood. This dish is cooked in a flat pan, not in a wok. Chicken, pork, shrimp and tofu are often used as additional ingredients. You can also use beef, squid or octopus. Depending on the regional varieties, ground chili or mild paprika for the color may be added.
Preparation: Fry any meat or shrimp with Pad Thai paste, add tamarind, fish sauce and palm sugar. Add previously soaked (about 10 minutes in hot water) wide rice noodles, egg and vegetables. Fry stirring over low heat.
