Used as an addition to soups, meat and salads. Contrary to the misleading but common name, it does not contain any soy: it is made from green pea starch. Due to the composition, it is not recognized as a traditional noodle: in Chinese cuisine it is treated as a vegetable. During deep frying, it increases significantly, creating tangled, light and brittle threads.
Preparation: Soak 5 minutes in hot water, cut with scissors, add to boiled or fried preparing.
