Tom Yum soup is famous of its spicy and sour flavors. The basic ingredients of the broth are lemongrass, Kaffir lime leaves or peel, fish sauce and hot chili peppers. The soup is usually cooked with shrimps, but also chicken, fish, various seafood with addition of mushrooms. The ready soup is sprinkled with fresh coriander leaves.
Preparation: (for 2 - 3 people): Boil 2 cups (440 ml) of water, mix with the content of the Tom Yum paste sachet. Add 15g of galangal, 30g of lemongrassand 50g of mushrooms (i.e. button mushroom). Add 200g of shrimps or your favourite meat, keep boiling. Turn off the heat when it is boiled. Add 1/2 tablespoon of fish sauce and 1/2 tablespoon of lime juice, or as preferred. Before serving add 2 - 3 Kaffir lime leaves and some well cut coriander leaves.
