A mild seasoning sauce, thick and brownish-red in color. It is ubiquitous in Chinese cuisine. In every chinese restaurant, hoisin sauce is included in at least a few dishes. It is so common there that it is referred to as "Chinese ketchup". Hoisin sauce, mixed with sugar and diluted with sesame oil, is a standard ingredient in Peking duck.

What makes hoisin an attractive ingredient in many dishes is the almost perfect combination of sweet, sour and salty elements. It is exciting to taste all of these flavors at the same time.

The hoisin sauce is somewhat reminiscent of Western barbecue sauce. Similarly, it pairs best with roasted meat, poultry or anything else that is covered with a little fat, like salmon. Also, tofu becomes an attractive dish when it is covered with a layer of hoisin sauce.

Preparation: Add to the dish during preparation.
