Tapioca is made from cassava starch. It is tasteless and does not cause allergies. It is an important ingredient of a gluten-free and low-protein diet. In the form of granules, it is used mainly for making so-called bubble tea (tea dessert), but also for puddings and other sweets.
Preparation: Put into boiling water, cook for about 15 minutes. Leave for a few hours, e.g. overnight. Cook again for about 20 minutes or until the granules are transparent.
